Strategy and Commercial Success

We ran a business assessment to uncover the untapped opportunities available to each outlet. We presented opportunities to outwit the competition by commercial solutions that made a measured difference.

 

People and Culture

Worked with the team (F&B Director, Bars Manager, Supervisors and consultants) at Middle Eight Hotel to reveal the untapped potential in the organisation. Organisational design, effectiveness, efficiency, and engagement.

 

Brand Development

We brought a range of specialist skills to evaluate their brand premise, the position their business occupies in the market, and its effectiveness in acquiring and retaining fans. We made a critical difference in tracking core and tactical activities in both online and offline environments.

 

Drinks Menu Development

We developed a strategy that combined elements of drinks menu planning and menu engineering.

 

System and Processes

Our business assessment revealed the gaps in systems and processes required to drive advocacy and ensure guests were looked after.

 

Productivity and Efficiency

We helped measure their performance month on month, providing exclusive benchmarked data and insights.

● Introduced reduced and new offerings across all outlets

● Designed new bar menus, including descriptions, specifications, and pricing

● Created and reorganised a comprehensive cost price master list for over 2,000 PLUs

● Adjusted pricing to reflect gross profit margins (GPMs)

● Increased gross profit percentage (GP%) by 27%

● Updated and reorganised POS systems (ALOHA)

● Improved logistics and layouts for new outlets

● Established a new team and culture

● Increased average spent per customer
